This week, my Teaser is from the newest addition to my cookbook shelf: From the Ground Up by James Villas. Ground meat is usually less expensive than other cuts, and I am looking forward to trying out some of these recipes.
“There’s not a single recipe in this book that bows to some people’s overinflated and misconceived obsession with fats, and the reasons are simple. First, fat is what gives ground and chopped meats, poultry and seafood much of their succulence and appealing texture, as anyone knows who’s sunk teeth into a juicy hamburger made with ground beef or chuck, chicken salad or croquettes made with the ground meat of a fatty old stewing hen, and fish cakes made with silky ground and minced salmon with a nice ratio of fat.”
I am hungry just reading it! I can’t wait to try some of these dishes.
